| Spinach and Mushroom Stir Fry
What you need:
• I bunch or 1 pound of fresh spinach
• I pound of button mushrooms
• 2 tablespoons of butter
• 1 tablespoon of minced garlic
• 1 tablespoon of minced fresh ginger root
• Soy sauce to taste
What you do:
1 Wash and pat dry the spinach, put to the side. With a damp paper towel brush clean the mushrooms and slice. Mince garlic and ginger root, place to the side.
2 In a large skillet under medium high heat add the butter. Add mushrooms and garlic and ginger. Sauté until the mushrooms are browned.
3 Add the spinach, it will wilt quickly- about 2 minutes. Add soy sauce, stir. take off the heat and serve. |
