Arugula is a herbaceous annual plant native to Europe and western Asia. Also known as rocket, this pungent smelling vegetable was known to the Romans. A member of the cabbage family, Arugula is related to watercress, mustard and radishes.
Arugula can be eaten raw or cooked, but it should be used with discretion, as it has quite a sharp flavor. It marks an attractive and flavorful seasoning in broths, salads, mayonnaise, sandwiches, potato salads and pasta. It is also delicious pureed and incorporated into soups and sauces. |
